A Midwestern Delicacy

“If you know, you know.”
As an Indian American, holiday meals growing up typically involved Indian food, and that was just fine by me. I married into a family with midwestern roots, though, introducing me to “delicacies” like fruit cocktail salads, canned yams, and my guilty pleasure favorite: ham, cream cheese, and pickle rolls. I smugly scoffed and laughed the first time I saw a tray of these green, white, and brown bites being devoured by my wife’s family as a pre-meal appetizer. But then I tried them and was hooked for life. I look forward to that perfect balance of salt, acid, and creaminess every year. As for a recipe, it’s pretty self-explanatory. Try them in good company. And if you know, you know.
