Vegetarian Somali Baasto & Suugo (Pasta and Sauce)

“Plate with a banana and freshly squeezed lime.”
Ingredients
- ½ Medium red onion diced
- ½ Green bell pepper diced
- 4 Cloves garlic minced
- ½ Cilantro bunch, freshly chopped
- ¼ Oil of your choice (recommend: avocado oil 😊)
- ½ Bottle of pasta sauce of your choice (recommend: tomato basil)
- 1 Large tomato
- 1 Tablespoon cumin
- 1 Tablespoon of coriander
- 1 Tablespoon of lemon pepper seasoning
- 4 Medium sized potatoes
- ½ Lime (optional)
- 1 Banana (optional)
- 1 lb. Angel hair pasta cooked al dente
Directions
- Blend garlic, cilantro, and tomato and put to the side.
- Boil potatoes until you can poke them with a fork (if you’re lazy, microwave them).
- In a large skillet, heat oil over medium high heat.
- Add in the onions and bell pepper.
- Cook until onions are slightly translucent.
- Add in pasta sauce.
- Add in garlic/cilantro/tomato blend.
- Add in cumin, coriander, and lemon pepper seasoning.
- Add soft potatoes.
- Stir everything, mashing the potatoes as you go.
- Let simmer on low to medium heat for 15-20 minutes.
- While your sauce is cooking, make your pasta according to package directions.
- Serve sauce over pasta, plate with a banana and squeeze lime over the banana.
