Sweet Potato Cranberry Pecan Smash

We started to make this to update beloved flavors for new dietary needs in the family. It tastes like a not-too-sweet sweet potato pecan pie!
Ingredients
The measurements are up to you to suit to your taste and you can make just one or several for as many guests you will be serving!
- Sweet potatoes
- Fresh cranberries
- Dried cranberries
- Pecans
- Feta cheese
- Butter
- Honey
- Cinnamon
Directions :
Preparation
- Preheat oven to 425 degrees.
- Line a roasting sheet pan with parchment paper.
- Spread a thin layer of butter over the parchment paper (where the circles will go).
- Wash sweet potatoes and cut into circles about ¾ inch thick. (I leave the peels on.)
- Wash and dry fresh cranberries.
- Mix butter and honey to your taste. (This will make the sauce so you need enough butter and go light on the honey~and add more later, if needed.)
- Crumble the feta cheese. (I use the block feta cheese.)
Cooking
- Place sweet potato circles onto the prepared roasting sheet pan.
- Roast 25 minutes in the preheated 425 degree oven.
- While the sweet potatoes are roasting, melt the butter/honey in a stovetop pan. (I use a small cast iron frying pan.)
- In the butter/honey sauce, add the fresh cranberries and let cook for a bit.
Then add the dried cranberries in the butter/honey sauce and stir gently. - Then add the pecans and coat them with the sauce. (Add more butter or honey to suit your taste.)
- Keep the cranberry/pecan sauce mixture cooking over a low heat.
Cooling and Combining
- By now, the sweet potato circles should be done! Remove the roasting sheet from the oven. (Allow the sweet potato circles to cool a little bit while you add the feta cheese to the cranberry/pecan sauce mixture.)
- Gently stir in the crumbled feta to the cranberry/pecan sauce mixture. (A little melting of the cheese is okay, but you want to see the crumbled feta.)
- Leave it cooking over “very low” heat while you get the circles ready!
- Place the sweet potato circle onto your festive serving dish.
- Create a shallow well in each circle by lightly smashing the center of each sweet potato circle with a spoon.
- Spoon in the cranberry/pecan/feta sauce mixture into each sweet potato circle.
- Sprinkle with cinnamon and enjoy!
