Salted Nut Rolls

Ingredients

  • Candy Bar:
    • 3 c powdered sugar
    • 1 (7 oz.) jar marshmallow crème
    • 1 tsp vanilla
    • ¼ tsp almond extract
    • 2 c chopped salted nuts
  • Caramel Coating:
    • 14 ounces caramels
    • 3 tbsp water

Directions

  1. Mix marshmallow creme with vanilla and almond extracts.
  2. Then add powdered sugar and knead well until smooth (need to use hands).
  3. Shape into logs and roll them in wax paper to make more even.
  4. Freeze for 2 hours or longer.
  5. Once the logs are frozen, melt caramels and water on the stove using a double boiler and mix well.
  6. Roll the logs in the melted caramel and then roll into the chopped nuts. (I usually use a cake pan to put the nuts in and roll the logs in there).
  7. You can make smaller logs or I make larger logs and then slice them into smaller pieces.
