Puff Puff
Taofikat Ninalowo-Olaofe
Puff puff (deep fried dough) is a very popular West African street food that is easy to make and snack on. I usually purchased puff puff while growing up in Lagos, Nigeria, but began making it for my family after moving to the U.S.!
Ingredients
- 2 c of flour
- ½ c of powdered Milk
- ¼ c of sugar
- ⅛ tsp of salt
- 1 tsp of nutmeg
- 2 tsp of yeast
- 1 c of water (¼ c more depending on preferred texture)
- Enough oil for deep frying
Process
- Mix the flour, powdered milk, sugar, salt, nutmeg, yeast, and water in a large bowl. Some use a whisk to blend it all together, but I prefer to wear gloves and use my hand to mix the ingredients together to ensure the texture is to my preference.
- Cover the bowl containing the mixture with a lid and set aside for 60 minutes.
- Heat up the oil in a pan that’s deep and wide enough to allow for proper frying (deep fryers work well for this). Be sure to let the oil get hot before proceeding to the next step.
- Uncover the bowl and scoop parts of the mixture with your hand, then squeeze some of the scooped mixture into the oil to fry until golden brown. Ensure that both sides are golden brown.
- Place a dry paper towel in a dry bowl.
- Once golden brown, using a sieve spoon, remove each puff puff from the oil and place in the dry paper towel.
- Enjoy the freshly made puff puff!.
