1 small tomato, cored and coarsely chopped (1/2 C)
¼ c minced red onion
¼ c chopped cilantro
Directions :
Halve, and peel the avocados. Remove the pits, reserving one.
With a potato masher, the back of a spoon, or a whisk, mash the avocado with the lime juice and salt until not quite smooth.
Fold in the tomato, onion, and cilantro.
Transfer to a medium bowl, place the reserved pit in the center, cover with some of the guacamole, then with plastic wrap (pressed right into the exposed guacamole) and refrigerate until ready to serve. Remove and discard pit at time of serving.
