Grandma‘s Butter Cake

Ingredients

  • 1 lb margarine (or 1/2 butter, 1/2 margarine)
  • 1 lb powdered sugar
  • 2 teaspoons vanilla extract
  • 6 eggs
  • 3 1/2 c cake flour (or 3 c + 1 tablespoon all purpose flour)

Directions

  1. Preheat your oven to 350. Grease an angel food cake or bundt cake tin.
  2. Using an electric mixer, beat margarine or butter and vanilla.
  3. Gradually add powdered sugar.
  4. Add eggs, one at a time, and beat well after each one.
  5. Turn mixer on low and add flour. Batter will be thick.
  6. Scoop batter into prepared pan.
  7. Bake for one hour, until top of cake is brown and a toothpick inserted into the cake comes out clean.
  8. Leave in pan to cool for 30 minutes, then run knife around the edges and invert onto a plate.
