Ingredients
- 1 stick of unsalted butter
- ¾ c sugar
- 2 eggs
- ½ tsp vanilla
- ¾ c semi-sweet chocolate chips
- ½ c all-purpose flour
- ⅓ c cocoa powder
- Dash of salt
- 24 small Daim candies (the kind that come individually wrapped in a large bag at IKEA)
- ⅓ c dark chocolate chips, melted, for drizzling
Directions
- Unwrap and freeze the Daim candies in advance
- Preheat oven to 350 F
- Melt butter over medium-low heat until milk solids start to turn golden then remove from heat.
- Add the sugar and whisk for about 30 seconds, then let cool.
- Mix the remaining dry ingredients in a separate bowl.
- Break the Daim candies into pieces with a rolling pin
- Put the butter/sugar mixture in a mixing bowl.
- Melt the semi-sweet chocolate chips in the microwave or on the stove, add the vanilla, and then add all of this to the butter/sugar mixture and whisk well.
- Let the mixture cool a bit, then add the eggs one at a time while whisking.
- Fold in the dry ingredients first, then fold in ⅓ of the chopped up Daim candies.
- Spread the mixture into a baking pan that’s greased and lined with parchment paper (8×8 works well), then sprinkle another ⅓ of the Daim candies on top
- Bake for about 30 minutes, until a knife comes out clean
- Let the brownies cool, then drizzle with the melted dark chocolate and sprinkle with the remaining ⅓ of the crushed Daim candies (ideally use the bigger Daim pieces for this part)
