Cheese Straws

When I think of the holidays, I picture strolling through the streets of Paris or New York, taking in the bright, twinkling lights and creative window displays, feeling the crisp chill of the frosty air, before stopping in for a bite to eat and a warming beverage in the company of family and good friends. This party recipe from Ina Garten channels that spirit.
Ingredients
- 2 sheets frozen puff pastry, defrosted overnight in the fridge
- 1 egg
- 1 c finely grated Gruyere
- 1/2 c freshly grated Parmesan
- 1 tsp minced fresh thyme leaves
- 1 tsp kosher salt
- Freshly ground black pepper
Directions :
- Preheat your oven to 375 degrees.
- On a lightly floured board, roll out each sheet of puff pastry until it’s 10×12 inches.
- Beat the eggs with 1 tbsp water and brush the surface of the pastry.
- Sprinkle each sheet evenly with half of the cheeses , thyme, salt, and pepper. Lightly press the flavorings into the puff pastry using a rolling pin.
- Cut each sheet crosswise with a floured knife or pizza wheel into 11 or 12 strips. Twist each strip and lay on baking sheets lined with parchment paper.
- Bake for 10-15 minutes, until the pastry has puffed and is golden brown. Turn each straw and bake for another 2 minutes.
- Cool and serve at room temperature.
