Artichoke Bruschetta

“My entire family is obsessed!”

My mom discovered this recipe over the summer and made it for one of our sailing club social events. It was a huge hit, and now my entire family is obsessed! It’s definitely going to be an appetizer staple for the holidays and other events going forward.
Ingredients
- 6 1/2 ounce jar marinated artichoke hearts, drained and chopped
- 1 medium tomato, seeds removed and diced
- 1/2 cup grated Romano or parmesan cheese
- 1/4 cup finely chopped red onion
- 2 garlic cloves, crushed
- 5 Tbsp mayonnaise
- Add 1/2 – 1 tsp salt for taste
- 1 French baguette, cut into 1/3-inch-thick slices
- Olive oil for basting
Directions :
- In a medium bowl, mix marinated artichoke hearts, cheese, red onion, garlic, tomato, mayonnaise, and salt.
- Baste olive oil on one side of the bread slices and place them on a baking sheet covered with parchment paper.
- Preheat broiler on oven. Place bread slices in oven for 3 minutes.
- Remove from oven and spoon artichoke mixture on each of the bread slices.
- Put tray back in broiler for 3-5 minutes. Keep an eye on it.
