Special Occasion Chicken Curry

When I was growing up in India, this was a chicken curry reserved for special occasions. It has now become a staple at our Christmas Day lunch, providing a nostalgic link between the past and present. This recipe has a couple of unexpected ingredients for an Indian curry. But I think they are what make the dish reliably delicious! See if you can pick them out…
Ingredients
- 2 lb chicken (pieces with bone in)
- 10 tsp coriander powder
- 3 tsp garam masala
- 1 tsp chili powder
- 2 tsp minced ginger
- 2 tsp minced garlic
- 2 oz shredded coconut (desiccated)
- 3 tsp soy sauce
- 8 tsp tomato ketchup
- 2 tsp milk
Directions
- Marinate chicken with all the ingredients for 3-12 hours.
- Cook for 1½ hours over a low to medium flame. Add water as needed to prevent the chicken from drying out.
- Serve with rice.
