When I was growing up in India, this was a chicken curry reserved for special occasions. It has now become a staple at our Christmas Day lunch, providing a nostalgic link between the past and present. This recipe has a couple of unexpected ingredients for an Indian curry. But I think they are what make the dish reliably delicious! See if you can pick them out…

Ingredients

  • 2 lb chicken (pieces with bone in)
  • 10 tsp coriander powder
  • 3 tsp garam masala
  • 1 tsp chili powder
  • 2 tsp minced ginger
  • 2 tsp minced garlic
  • 2 oz shredded coconut (desiccated)
  • 3 tsp soy sauce
  • 8 tsp tomato ketchup
  • 2 tsp milk

Directions

  1. Marinate chicken with all the ingredients for 3-12 hours.
  2. Cook for 1½ hours over a low to medium flame. Add water as needed to prevent the chicken from drying out.
  3. Serve with rice.
